새롭게 마친 연구에 의하면, 채식주의자들은 다양한 영양섭취 권고를 준수하여야 한다.

 

이 연구에는 균형 있는 식단을 가진 채식주의자 그룹과 결핍된 식단을 가진 채식주의자 들이 참여하였다.

 

전형적인 결핍으로 단백질의 불균형과 베리, 과일, 넛츠의 섭취가 낮았으며, 영양 강화된 식품들을 섭취하지 못했다.

 

하지만 대부분 비타민 B12 D보충제, 칼슘 강화된 드링크제가 추천되었다.

 

이 조사결과는 PLOS ONE에 공개되었다.

 

채식주의자 그룹 중 24%의 혈청 비타민D 농도가 기준치 아래였다.

 

또한 그들은 ß-카로틴, 셀레늄, 요오드, 필수지방산의 농도도 채식 식단을 따르지 않은 대조군 그룹보다 더 낮았다.

 

연구원들에 의하면 조사결과에서 채식주의자들이 영양가이드를 따르고 추천 영양 보충제를 섭취할 필요가 있다고 강조하였다.

 

더욱이 채식주의자들은 비타민D와 요오드 섭취에 더 많은 주의를 기울여야 한다.

 

채식주의자 식단은 서부 사회에서 흔하다.

 

하지만 모든 필수 영양소들의 섭취를 유지하기 위하여 채식주의자 식단은 균형을 골고루 갖춘 구성을 필요로 한다.

 

이 연구는 평균 8년 동안 채식주의 식단을 따른 청년들의 영양상태를 분석했다.

 

이 연구에는 남성 채식주의자 6명과 여성 채식주의자16, 채식주의 식단이 아닌 대조군 17(남성8, 여성11)이 참여하였다.

 

연구원들은 비타민 B12와 비타민D, 셀레늄 요오드, 필수 지방산과 같이 채식주의자 식단에서 제한되었거나 결핍된 영양소들의 섭취와 농도에 특히 관심을 가졌다.

 

연구에 참가한 사람들의 식품 섭취는 3일 동안 기록되고 분석되었으며, 그들의 영양상태는 혈액과 소변 샘플을 통해 측정되었다.


 

불균형한 식단을 가진 여러 채식주의자들

채식주의자 그룹의 식단은 오로지 식물을 기반으로 한 식품으로만 제한하였으며, 채식주의자에서 레귐, 두부, 콩가루의 섭취가 대조군 그룹보다 더 높았지만 다른 눈에 띄는 차이는 관찰되지 않았다.

채식주의자 중 91%, 대조군 중 78%가 영양 보충제를 섭취하였다.

채식주의자 그룹에서 91%가 비타민 B12 보충제를 77%가 비타민D 보충제를 섭취하였으며, 대부분 칼슘 강화된 드링크제를 섭취하였다.

채식주의자의 비타민 B12 농도는 대조군과 비교했을 때 기준치 이내였다.

혈청 비타민 D 농도는 채식주의자 중 26%, 대조군 중 6%에서 기준치 아래였다.

또한 채식주의자들은 ß-카로틴, 셀레늄, 요오드, 필수지방산(EPA, DHA)의 농도가 더 낮았다.

하지만 대조군과 비교했을 때, 채식주의자들은 더 높은 다가불포화지방산 농도를 가졌으며, 포화지방산 농도가 더 낮았다. 게다가 채식주의자에서 폴리페놀의 농도가 더 높았다.

소변 요오드의 평균 농도는 두 그룹 모두 권장 수치보다 낮았다.

이전 연구는 핀란드에서 오랫동안 요오드 섭취가 감소되어왔다는 것을 보여준다. 요오드는 우유나 요오드 첨가한 소금에 존재하며, 이들의 사용이 감소되어 왔다.

영양섭취 권고에 따르면, 채식주의자의 식단은 균형을 가져야만 한다.

Vegans adhere to nutrition recommendations in varying degrees, according to a new Finnish study.


Some vegans who participated in the study followed a balanced diet, while others had dietary deficiencies.

Typical deficiencies were an unbalanced use of protein sources, a low intake of berries, fruits and nuts, as well as failure to use nutrient fortified food products.


The majority, however, used vitamin B12 and D supplements and calcium-fortified drinks as recommended.

The findings are published in PLOS ONE.


The serum vitamin D concentrations were below the reference values in 24% of the vegan group.

They also had lower concentrations of beta-carotene, selenium, iodine and essential fatty acids than the control group following a non-vegetarian diet.


According to the researchers, the findings highlight the need of vegans to get nutrition guidance and to use the recommended nutrient supplements.

Moreover, closer attention should be paid to the intake of vitamin D and iodine among vegans.


Vegetarian and vegan diets are increasingly common in western societies.

However, in order to ensure the intake of all the necessary nutrients, vegetarian and vegan diets need to be composed in a well-rounded manner. Research into the nutritional status of vegans nevertheless remains scarce.


The study analysed the nutritional status of young adults who had been following a vegan diet for an average period of eight years.

The study involved six male vegans and 16 female vegans, and the matched control group comprised eight men and 11 women who followed a non-vegetarian diet.


The researchers were especially interested in the intake and concentrations of nutrients that are limited or lacking in vegetarian foods, for example vitamin B12, vitamin D, selenium, iodine and essential fatty acids.

The food intake of the study participants was analysed from three-day food records, and their nutritional status was measured from blood and urine samples.



Some vegans follow an unbalanced diet

The diet of the vegan group was exclusively limited to plant-based foods, and their intake of legumes, tofu and soy flour was higher than the control group’s, but no other significant differences were observed.


Nutrient supplements were used by 91% of the vegan group and 78% of the control group.

Vitamin B12 supplementation was used by 91% of the vegan group, vitamin D supplementation by 77%, and the majority also used calcium-fortified drinks.


The vitamin B12 concentrations of the vegan group were within the reference values, as were the values of the control group.

The serum vitamin D concentrations were below the reference values in 24% of the vegan group and in 6% of the control group.


Vegans also had lower concentrations of beta-carotene, selenium, iodine and the essential EPA and DHA fatty acids.

All in all, however, vegans had higher polyunsaturated fatty acid concentrations and lower saturated fatty acid concentrations than the control group. In addition, the concentrations of soy polyphenols were high in vegans.


The median concentration of iodine in urine was below the recommended levels in both groups.

Earlier research shows that the intake of iodine has decreased in Finland over the past years. Iodine is present in milk and iodine-fortified salt, the use of which have declined.


According to nutrition recommendations, a vegan diet should involve a balanced.

In addition, vegans should consume calcium-fortified drinks and use vitamin B12, vitamin D and iodine supplements to complement their diet.
