요오드는 위장에서 방부제(항패혈) 활동을 한다. 위안에서 많은 헬리코박터 파일로리균은 높은 위암 발병률과 관련이 있다. 요오드의 정상적인 활동은 병원성 균들로부터 위장을 보호해준다.

 

요오드와 식품 알레르기


브라질 그룹은 요오드와의 반응으로 큰 이종 단백질을 비 알레르기성으로 만든다는 사실을 발견하였다. 이는 개 흉관의 요오드 연구에서 관찰된 것을 설명하는 것으로 보인다. 위와 장을 배수하는 흉관의 요오드 농도가 혈청 내 요오드 수치의 약 5배라는 것을 발견하였다. 하지만 개에게 우유를 먹였을 때 흉관의 요오드 함량이 20~30배까지 증가하였다. 이것은 요오드가 실제로 우유와 같은 이종 단백질을 둘러싸서 이종 단백질이 면역 시스템을 공격하는 것으로부터 보호하는 순환계에 들어갈 수 있게 해준다는 것을 의미한다.

 

요오드와 자가면역질환


자가면역 질환은 갑상선, 췌장 및 기타 세포의 경미한 손상과 관련이 있다. 죽은 세포가 혈류에 그 내용물을 버리면 이러한 단백질들 중 일부는 몸에서 이물질이 되며, 결과적으로 면역시스템은 그 이물질에 대한 항체를 만든다. 이러한 항체들은 정상 조직들을 공격할 수 있다. 혈류에 충분한 요오드가 존재한다면 죽은 세포로부터 버려진 단백질들은 요오드로 코팅되어 비 알레르기성으로 만든다는 것은 논리적으로 보인다. 따라서 자가면역 질환의 원인은 손상으로 인한 질환이 있을 때 불충분한 요오드 순환과 관련이 있을 수 있다.

 

지질에 용해되는 요오드의 능력


지방 섭취와 유방암 사이의 모호한 연관성은 미량 영양소를 제거하는 지방과 관련이 있을 수 있다. 지방의 이중 결합 수를 측정하는 방법 중 하나는 지방 100g에 있는 요오드의 양을 측정하는 것이다. 이것을 요오드 값이라 한다. 가장 불포화된 지방은 가장 높은 요오드 값을 가진다. 하지만 상반기의 초기 실험에서 고지방 사료를 먹인 강아지들에게 갑상선종 발달이 관찰되었다. 이것은 섭취된 지방이 식단을 통한 요오드를 제거한다는 것을 암시한다. 요오드는 Crawford Marsh가 논의했던 중추 신경계의 혈관과 시냅스 막과 같은 요오드를 필요로 하는 장소로 수송되는 동안에 지질의 이중 결합을 보호해준다.

Other functions of iodine in the stomach


From the work of Heneine and Heneine we can propose more protective function for iodine in the lumen of the stomach. They showed clearly, the simple chemical reaction iodinating tyrosine and histidine in vitro deactivated biological poisons such as snake poisons.

Iodine must have antiseptic activity in the stomach. The Japanese high incidence of helicobacter pylori in their stomachs relates to their high incidence of stomach cancer. The normal activity of iodine must be to protect the stomach from pathogenic organisms.


Iodine and food allergies


The Brazilian group found large foreign proteins were made non-allergic by reactions with iodine. That seems to explain an old observation seen in the study of iodine in the thoracic duct of dogs. It was found that the concentration of iodine in the thoracic duct, which is draining the stomach and intestines, is about five times the level in the serum. But if milk was fed to the dogs the thoracic duct iodine content went up by 20-30 times. This implies that iodine does in fact coat the foreign proteins like milk and allows them to enter the circulation protected from the immune system attack on a foreign protein.


Iodine and autoimmune disorders


Autoimmune diseases are related to a minor damage to the cells of the thyroid gland, pancreas and others. When the dead cells dump their contents into the blood stream, some of these proteins are foreign to the body, consequently, the immune system makes antibodies to them. These antibodies can go on to attack normal tissues. It seems logical that if there was enough iodine in the blood stream the discarded proteins from dead cells will be made non-allergic by a coating of iodine. Thus the origin of autoimmune diseases could relate to inadequate circulating iodine at the time of the illness, which caused the damage.


Iodine's ability to dissolve into lipids


The vague link between fat intake and breast cancer might be related to fat removing a micronutrient. One of the ways to measure the number of double bonds in fat is to measure the amount of iodine 100 grams of fat would take up. This was called the iodine number or value. The most unsaturated fat has the highest iodine value. But at the same time early experiments in the first half of the century showed puppies fed a high fat diet developed goiters. This suggests dietary fat removes iodine from the diet. It may be iodine protects double bonds while they are being transported to the sites where they are needed such a blood vessels and synaptic membranes of the central nervous system discussed by Crawford and Marsh.
